Best Grilled Cheese Ever Italian Beef and Giardiniera Grilled Cheese

Late post!   Everyone knows I love food. I am a foodie for life!  It’s funny because I was a late foodie. I weighed 110 pounds soaking wet until I was about 21. 😂  But as I got older, I learned to appreciate good food.

Last month, I attended this year’s annual Taste of Chicago, the largest food festival in Chicago. I used to go every year but I hadn’t been in the last several years. I loved it! So many new restaurants and pop-ups. I enjoy sampling different cuisine and then I go home and try and remake it. I tried the taste of nachos from Esperanza, Star of Siam‘s Pad Thai Noodles, Churro Factory-Xurro’s churritos with ice cream and more, but the winner for me was the Italian beef and giardiniera grilled cheese from Doom Street Eats, best grilled cheese ever.   Yummy!

Here’s my take on it.

1/2 lb deli thinly sliced roast beef

1/2 lb cheddar cheese

Giardiniera

1/2 onion

softened butter

All the stars, nothing too fancy.   I did go for some hardy bread that could hold all of the ingredients.

Place 2 tablespoons of butter in a cast iron skillet over medium high heat and saute the onions.   Reduce to medium low and cook until soft.   Then remove the onions to a plate and set aside.

Add 2 more tablespoons of butter and add the roast beef.   Break up the roast beef with a spatula moving it all around until brown, add in the cooked onions and then set aside in a plate.

Spread a small amount of butter on one side of each slice of bread and place butter side down in skillet, add the meat, one tablespoon of giardiniera, cheese and place the other piece of bread butter side up on top.  Cook on one side until cheese melts and brown on one side, flip and cook until crispy on the other side.

I wrapped it up in foil until dinnertime to keep warm.     And of course I had to get the thumbs up from the kids.   She approves! 👍
